SOFT CHICORY SAUCE

 Red chicory from Trévise (called in Italian “radicchio rosso”) is much appreciated to make salads and sauces. 

Its slightly bitter flavour gives a particular taste to risotto and pasta. 

Season a bit more this sauce by adding a little fresh butter and savour it with escalope or pizza.
